Pie Making

My mother claimed to not have taught me to bake pies, although she was an excellent cook. I probably started to bake pies in my early twenties when I had my first apartment. Practice makes perfect, and I loved to eat the experiments. My best results continue to be with hand mixed dough that is freshly rolled out. My worst doughs have been mixer prepped and refrigerated. Follow the steps of the older cookbooks for best baked goods.
