Pie Making

My mother claimed to not have taught me to bake pies, although she was an excellent cook. I probably started to bake pies in my early twenties when I had my first apartment. Practice makes perfect, and I loved to eat the experiments. My best results continue to be with hand mixed dough that is freshly rolled out. My worst doughs have been mixer prepped and refrigerated.
