Tomato Sauce
Ever since my husband and I have gardened in a peapatch on the sunny side of the Island, we have been planted tomato plants. This year,2009, has given us a bumper crop. Our weather has been sunnier then usual. The conditions have been just right. During March, I begin to sow the seed of varieties such as Black Krill, Pink Cherokee, and Goliath--a total of about ten varieties. These plants are nursed indoors until June when they can be safely set out of doors. We planted 24 and watched them expand into a hedge of foliage. Worried, I read that it was wise to remove unwanted foliage, especially after the flower had set with fruit. Huge piles of leaves were cut, and the fruit thrived. Every day we now pick a bucket of tomatoes ready to be processed into the beginnings of a sauce. We like to prep the tomatoes and freeze them down to be slowly simmered with spices later on in the winter months.
